How to Hard Boil the Eggs
There are a lot of instructions out there for properly boiling your eggs, this is the best way we have found to cook them properly.
Put eggs in a heavy bottom pot with enough water to cover the eggs by 1″ and add 2Tbs of Baking Soda.
Bring water to a rolling boil and continue to boil for 15 minutes.
Put eggs in an ice cold water bath until cooled, and then peel under cold water.
Creamy Deviled Eggs
Ingredients
- 8 large hard-boiled eggs (Peeled)
- 2 tablespoons mayonnaise, or more as needed
- 3 tablespoons cream cheese, softened
- 1 teaspoon Lambrusco vinegar
- 1 teaspoon prepared horseradish
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon Raw Honey
- 1 pinch cayenne pepper
- Pacific Flake Sea Salt, to taste
- 1/4 teaspoon ground Grains of Paradise, to taste (African Peppercorns)
- Smoked Hot Paprika to taste
Notes
**NOTE - If you are increasing the volume of this recipe, BE CAREFUL to slowly add the Cayenne Pepper and taste as you go to not over spice the dish. Hot spices typically do not need to be increased when making larger batches.
Tasty Options: Add 8 small pitted manzanilla olives with pimento finely chopped into the filling for a salty pop. Kalamata Olives will also work well.
Instructions
- Cut the peeled eggs in half lengthwise and scoop or pop out the yolks into a mixing bowl.
- Mash the yolks with the mayonnaise, cream cheese, vinegar, horseradish, mustard, honey, grains of paradise, and cayenne until smooth. Add salt to taste. If the mixture seems too dry, add a touch more mayonnaise.
- Using a spoon or a pastry bag with a star tip, generously fill the holes in the egg white halves with the egg yolk mixture.
- Sprinkle the tops with hot smoked paprika. Chill well before serving.
