Blanching is a simple process of boiling fresh vegetables, the benefit of this method is that you easily control the texture. A quick blanch will give you a vibrant color and firm texture, leave them in a little longer to get a softer texture.
Blanched Broccoli with Lambrusco
Very simple and healthy side dish for any occasion. Cooking times will vary depending on how firm you prefer your Broccoli.

Ingredients
- 1 Head of Broccoli
- 2 Tbs Lambrusco Vinegar
- 1 Tbs Only the Lonely Onion Blend
- Vintage Merlot Sea Salt to Taste
- Pennsylvania to Taste
Instructions
- Bring a pot of water with 1 Tbs of Lambrusco Vinegar and a pinch of Vintage Merlot Sea Salt to a rolling boil
- Fill a bowl with Ice Water and set aside
- Cut florets from the head of Broccoli
- Put the Broccoli in the water and cook for approximately 5 minutes or until softened slightly
- Remove Broccoli from water and put in the Ice Water to stop the cooking process
- Drain Broccoli and put in a bowl then mix 1 Tbs Lambrusco Vinegar and Onion Blend together
- Add Pennsylvania Pepper Blend and Vintage Merlot Sea Salt to taste
