In addition to the peppery flavor that you’d expect, you’ll also pick up hints of garlic and even some gentle sweet notes provided by the green and roasted red bell peppers. Black pepper, Piper Nigrum, is the most traded spice in the world. It is ubiquitous in the modern world as a seasoning and pepper derives its spicy heat from the chemical compound piperine. Black pepper contains between 4.6% and 9.7% piperine by volume (white pepper contains a bit more than that). By weight refined piperine is about one percent as hot as the capsaicin compound found in chile peppers (this is the chemical that makes chile peppers hot).
