Roasted Sweet Potatoes

Ingredients
- 4 Medium to Large Sweet Potatoes
- 2 Tbs Vanilla Extra Virgin Olive Oil
- 1 Tbs Mediterranean Thyme
- Pennsylvania Pepper
Notes
This recipe works just as well with Butternut Squash, Carrots or even Beets. For a slightly different flavor, Maple Extra Virgin Olive Oil works very well also.
Instructions
- Preheat oven to 450°
- Cut potatoes into half inch cubes
- Put all of the ingredients into a ziplock bag and shake to coat
- Line a baking sheet with parchment paper and spread potatoes out evenly on the pan
- Roast in the oven for 30 minutes until cooked through
