Throw away the seasoning packet!
Who doesn't love Ramen? This recipe can be altered any way you want! We like to make ours salty and spicy as you'll see from the ingredients but if you want less sodium, you can use reduced sodium Chicken Broth, Lower Sodium Soy Sauce and add the Soy Sauce slowly and taste along the way.
Ramen Bowl
Any store bought Ramen is perfect for this recipe, you're only using the noodles so do yourself a favor and throw out the seasoning packet that comes in the package. The Jalapeno Pepper is optional, if you prefer a less spicy soup, just leave it out.

Ingredients
Broth
- 32oz Chicken Broth
- 1 Tbs Toasted Sesame Lemongrass Ginger Oil
- 1 Tsp Chile Oil
- 2 Tbs Soy Sauce
- 1 Tbs Minced Garlic
- 1 Tbs Minced Ginger Root
- 1 Tsp Lime Juice
Toppings
- 2 3oz Packages Ramen Noodles
- 8oz Shiitake Mushrooms
- 4 Scallions
- 1 Head Bok Choy
- 1 Fresh Jalapeno Pepper
Notes
You can put the leftovers in the fridge for up to a week. Keep in mind that if you use a Jalapeno, the soup will increase in spice each day.
Instructions
Prepare the broth
- Wash and thinly slice the mushrooms
- Using a medium size pot over medium/high heat, add Sesame Oil and let it come to temperature.
- Add the Garlic, Ginger, Mushrooms, Soy Sauce and Chile Oil to the pot.
- Mix all of the ingredients together and keep them moving so they don't burn. Cook until the mushrooms soften and start to caramelize slightly. Approximately 10 minutes
- Add the Chicken Broth and bring to a boil.
- Once it's reached a boil, reduce to a simmer. Let it simmer for 25 minutes
While the Broth is simmering prepare the Toppings
- Slice the Bok Choy into 1/2" Strips
- Slice the Scallions into 1/8" pieces
- Thinly slice the Jalapeno Pepper and remove the seeds
Finish of the dish
- While the soup is still simmering at the end of the 25 minutes, add the Ramen Noodles, Bok Choy, Scallions, Jalapeno and Lime Juice.
- Simmer for an additional 5 minutes to soften the noodles
- Remove from the heat and give it a good stir to separate the noodles.
