Quick Pickled Red Onions

Ingredients
- 1 Large Red Onion, Peeled and Sliced thinly
- 3/4 Cup Blackberry Roasted Pepper Fruit Vinegar
- 1/4 Cup Water
- 1 tsp Fine Sea Salt
- 2 tbs Wildflower Raw Honey
Instructions
- In a small sauce pan, stir together the vinegar, water, salt and honey.
- Cover over medium-high heat until the mixture reaches a simmer.
- Place the thinly sliced onions in a mason jar.
- Pour the liquid into the jar, put the lid on the jar and shake to evenly coat the onions.
- Let the onions marinade for 30 minutes. Be sure that the onions are pressed down under the liquid.
- After 30 minutes, they are ready to eat or you can refrigerate them for up to 2 weeks.
