Who doesn’t love Corned Beef and Cabbage? In our home, we love to add extra layers of flavor by adding a splash of vinegar to the vegetables and serving the dish with a spicy yellow mustard.
It’s important to select a Corned Beef with as little fat as possible. If you bend the meat while it’s in the package, you can tell how much fat is hidden inside by how it folds. The more resistant it is to fold, the larger the layer of fat is present. After selecting the perfect piece, you may still want to trim off any excess before cooking.
Instant Pot Corned Beef and Cabbage
Ingredients
- 1 Tbs Caraway Seed
- 1 Tbs Dry Mustard Powder
- 1 Tbs Pickling Spice
- 1 12oz Guinness Beer
- 3 Lb Corned Beef
- 1 Cup Baby Carrots
- 2 Celery Ribs cut into 1" pieces
- 2 Garlic Cloves
- 2 Medium Onions cut into quarters
- 8 Small Red Potatoes
- 2 Cups Beef Stock

You can use the spice packet that typically comes with the Corned Beef but using a higher quality Pickling Spice will add a new level of flavor to the dish.You can also kick the flavor up more by using our Hot Pickling Spice.
We also like to add Lambrusco Wine Vinegar to the vegetables before serving, it adds a great sweet tangy flavor.
When planning your dinner time, be sure to add 30 minutes for the Instant Pot to build pressure.
For a larger portion of Corned Beef, you can use up to a 6lb portion with the same cooking time and preparation.
Instructions
- Rinse Corned Beef and trim all excess fat
- Add Corned Beef, Pickling Spice, Caraway, Mustard Powder, Beer, Onion, Garlic and Beef Broth to the Instant Pot.
- Set timer for 90 minutes
- When time is up release pressure and add remaining vegetables
- Cook additional 10 minutes
