We elected to use Olive Oil instead of Butter for this recipe. If you’re not a fan of Tarragon, you can use Butter Extra Virgin Olive Oil instead and still get the health benefits of not using Butter.
Baked Flounder
This very simple recipe is great for a weeknight dinner when you're low on time. Pair it with steamed Broccoli or Wild Rice.

Ingredients
- 2 Large Flounder Fillets
- 2 Tbs Tarragon Extra Virgin Olive Oil (Divided)
- 1 Tbs Lemon Juice
- Pennsylvania Pepper Blend to taste
- Dried Dill to taste
- Dried Parsley Flakes to taste
- 2 Scallions - Chopped
Notes
Be sure to use the Olive Oil sparingly so you don't create too much moisture in the baking dish to avoid the fish becoming soggy. You'll know the fillets are done when they easily flake with a fork.
After the fish is done cooking, you can also set the oven to Broil for 2 to 3 minutes to ensure a nice crust on the fish.
Instructions
- Preheat oven to 350 degrees
- Lightly grease a large baking dish with 1 Tbs of Olive Oil.
- Rinse the Fillets and pat dry on both sides.
- Rub the fillets on both sides with lemon juice, then Pennsylvania Pepper them to taste.
- Place the fillets in the baking dish & completely rub them down with remaining Olive Oil.
- Then sprinkle evenly with chopped scallions & dill.
- Bake for about 25 to 30 minutes until fish is done but NOT OVER COOKED.
- Sprinkle with parsley.
