Cod is a relatively inexpensive fish that can be found in almost any grocery store, it’s meaty and firm texture makes it a great vehicle for this flavorful sauce.
Coconut Curry Baked Cod
With just 5 ingredients, this is a great way to mix it up on a weeknight. This recipe pairs well with some Jasmine Rice.

Ingredients
- 4 Cod Fillets
- 32oz Coconut Milk
- 2 Tsp Grated Fresh Ginger
- 3 Tsp Thai Coconut Blend Seasoning
- Pennsylvania Pepper Blend
- Chopped Scallions (For Garnish)
Notes
You can substitute the Scallions for Fresh Cilantro or almost any other fresh herb of your choice.
Instructions
- Preheat oven to 400°
- Season cod fillets with Pennsylvania Pepper Blend
- In a small saucepan over medium heat, whisk together Coconut Milk, Ginger and Thai Seasoning until smooth
- In a large glass baking dish, pour a thin layer of sauce in the baking dish.
- Place Cod Fillets in the baking dish and add the balance of the sauce.
- Bake for 20 minutes or until the Cod is fully opaque and flakes easily with a fork.
- Top with Scallion and serve.
