You can vary this recipe with any combination of vegetable that you prefer from Green Beans, Broccoli or even Brussels Sprouts. The key is using a quality Kielbasa and a softer type of potato. Golden, Red or Fingerling Potatoes give a rich texture and roast well but you could use Russet Potatoes in a pinch.
This is a great weeknight meal when you’re pressed for time.
If you’re short on ingredients, you can substitute the Meyer Lemon Olive Oil with the Roasted Chile & Garlic Olive Oil or use a different flavor on hand. The same goes for the spices, Garlic Powder can be substituted for the Love of Garlic Seasoning and Brown Sugar can be substituted for the Honey Rub.
Kielbasa, Potatoes and Asparagus
Ingredients
- 1 Kielbasa Sausage
- 1 Bunch of Asparagus
- 1 lb Potatoes (Fingerling, Red or New Potatoes)
- 1 Tsp For the Love of Garlic Seasoning (or Garlic Powder)
- 1 Tsp Sweet Honey Heat Rub & Seasoning
- 1 Tbs Roasted Chile and Garlic Extra Virgin Olive Oil
- 1 Tbs Meyer Lemon Extra Virgin Olive Oil
- 1 Tsp Lambrusco Vinegar
- Pennsylvania Pepper Blend to taste
Notes
We highly recommend spending an extra dollar or two on a Kielbasa from a local Butcher instead of a Grocery Store brand. Most sausages found in the local Grocery Store contain Monosodium Glutamate and other fillers, you can usually find a higher quality hand made Kielbasa at the Butcher for around $8.00. You will definitely taste the difference!
Instructions
- Preheat oven to 400 degrees
Prepare the ingredients
- Cut the Kielbasa into 1/2" pieces
- Trim the bottoms of the asparagus, you want to remove the entire white bottom which is very fibrous. Cut into 1" pieces.
- Cut potatoes into quarters, larger potatoes should be cut into bite size pieces
Season the ingredients
- Put potatoes, Roasted Chile & Garlic EVOO and For the Love of Garlic Seasoning in a ziplock bag. Toss to coat
- Put asparagus, Meyer Lemon EVOO, Lambrusco Vinegar and Sweet Honey Rub in a ziplock bag. Toss to coat
Time to cook
- Line a sheet pan with aluminum foil, spread out potatoes in an even layer
- Cook for 15 minutes
- Flip potatoes and add Kielbasa in an even layer
- Cook for 5 minutes
- Flip potatoes, Kielbasa and add asparagus in an even layer
- Cook for 10 more minutes
- Serve immediately
