Why Use a Garlic Grater Plate?
Have you ever noticed that chefs do not use a garlic press? The reason is that pressing separates out some of the components of the garlic dove which can cause the flavor to be out of balance. The garlic clove contains flavor, aroma, amino acids, sulfides and a large amount of natural sugars. The pressed garlic can become bitter because it is losing the sugars in the pulp that is left behind in the press. When a grater plate is used, all these valuable and delicious components are_ left on the plate. The grated garlic becomes pliable and spreadable, just like butter. Utilize your garlic spread in many ways … add olive oil directly to the dish and dip fresh toasted bread into it; whisk into a vinaigrette with Dijon mustard; add to sauces, soups, stews and marinades; spread onto bread to make the best garlic toast ever; or even directly spread onto meat to use as a rub; the uses are limitless. Also use this plate for hard aged cheese, chocolate, spices (i.e. nutmeg), ginger root, bread crumbs, and to make citrus zest. Leave them out on the counter for a discussion piece with your dinner guests.
